Watermelon and Avocado Salad with Spicy Lime Dressing

Duh-Freaking-Licious!! I know, I say this about everything I make, and in truth I don’t post the disaster recipes like the Bacon Bourbon Chicken that caused a major fire in my barbecue the day after I made it. This recipe IS an end (or beginning) of summer super yummy salad. Serve it icy cold and don’t forget the jalapeños (thinly thinly THINLY sliced!), and I would like to remind you not to touch your nose after slicing any kind of chile.

Ingredients (another “completely bought at Trader Joe’s” recipe)

super thinly sliced red onion (this is where those killer razor knives from Surfa’s come in handy!)
feta cheese
avocado cubes
mint and/or basil (I love both)
sprouts or small salad greens (micro salad greens from TJ’s)
1/3 cup olive oil
juice of 1 lime
1/2 jalapeno, sliced
optional – 1 clove of garlic, smashed (remove it before using)
salt and pepper


Whisk together the dressing, set aside.

Cube the watermelon, add a few good pinches of salt and a squeeze of lime.

Assemble the salad and drizzle on as much dressing as you like.
