Shaved Zucchini Salad with Feta and Sunflower Seeds

Mary made a version of this for me last week, and it was so good! I’m not a zucchini fan unless it’s raw, and this turned out to be a perfect summer salad. The version Mary made had the same lemon and olive oil dressing, but it also had pinenuts, Parmesan and basil. This is a little different, but I made it twice in the last couple of days and loved the saltiness of the feta and sunflower seeds.

Serves 4

Shave 2 medium summer squash lengthwise with a vegetable peeler (dig deep) and toss with 2 T. fresh lemon juice and 2 T. of a good olive oil, season with kosher salt and freshly ground pepper. Top with 1/4 cup crumbled feta, 1/4 cup torn fresh basil, and 2 T. salted, roasted sunflower seeds. I sprinkled mine with some red pepper flakes. YUH-HUM-MY!!!
