Strawberry Mojito

(Shake this drink before adding the carbonated soda water, to avoid making a mess.)
2 tablespoons simple syrup
6 strawberries, hulled
10 mint leaves
Soda water
Juice of 1 lime
2 jiggers (3 ounces or 6 tablespoons) rum
Lime sugar (see note)
Strawberries and mint, for garnish

Combine simple syrup, strawberries, mint leaves in a jar for which you have a tight-fitting lid. Crush together with the back of a spoon until you smell the mint. Squeeze lime into shaker; add rum and a little ice. Close tightly and shake hard.Strain out berries and mint pulp, leaving the clear, pink liquid (if you wish — I didn’t like picking mint shreds out of my teeth). Divide liquid between 2 chilled glasses dipped in lime sugar and filled with ice. Add a good splash of soda water and stir each drink well, for at least 30 seconds. Garnish with a strawberry and a mint sprig, if desired.
Serves 2.

Lime sugar: Combine 1 cup sugar and 2 tablespoons of the grated zest (the colored part of the rind) of 2 limes. Shake the mixture in a jar with a tight-fitting lid.
