Spring Fling Chopped Salad

Serves 4 – 6

Salad
1 c. cucumbers, cleaned and chopped
1 c. Belgian endive, cleaned and chopped
1 c. blue cheese, crumbled
1 c. avocado, chopped
1 2/ candied pecans (recipe follows)

Mix all ingredients together and toss with Balsamic Vinaigrette

Candied Pecans
1 c. sugar
1 c. pecans

Melt the sugar over high heat; once melted, add the pecans; remove from the heat and stir.  Pour onto a greased cookie sheet.  Once cool, break into bite-sized pieces.

Balsamic Vinaigrette
¾ c. Dijon mustard
¾ c. olive oil
¾ c. balsamic vinegar
¾ c. white wine vinegar
1 t. minced thyme
¼ t. ground black pepper
¼ t. salt
dash Tabasco

Place all ingredients in bowl and mix well.
