Black Japonica Rice Salad

This is one of my favorite potluck dishes.  I’m always asked for the recipe.  Trisha

2 c. Black Japonica rice
3 ¼ cups water
2 c. whole corn
¾ c. rice vinegar
3/8 c. canola oil
¼ c. soy sauce (more or less to taste)
1 c. roasted cashew pieces
½ c. toasted sesame seeds
½ bunch green onions, chopped
1 medium red bell pepper, diced

Wash rice, drain.  Cover and bring to a boil in water.  reduce heat to medium low.  Simmer until done, about 30 minutes.  Add rice vinegar while rice is hot.  Do not stir.  Allow rice to cool with cover off.  Fluff in the rest of the ingredients rather than stirring.  Serve hot or cold.  Makes 8-10 cups.
