Union Street Cafe Onion Rings

¾ c. + 2 T. beer (not dark)
1 c. flour
¾ c. parsley, minced
¾ t. salt
1 large sweet onion (walla walla, maui)

In a bowl, whisk beer into flour until batter is smooth and then whisk in parsley. Let batter stand 30 minutes, then stir in ¾ t. salt. Cut onion crosswise into ½” thick slices and separate slices into rings. In a large deep skillet, heat 1” oil to 380 degrees. Working in batches of 4 to 5 rings, drag rings through batter to coat completely, letting excess drip off, and fry, turning, until golden, about 1 to 2 minutes. Transfer rings as they are fried to paper towels to drain, and season with additional salt.
