Thai Chicken Chopped Salad

Serves 4-6
Salad

1 c. bean spouts
1 c. chicken, cooked and chopped
(I sauté it briefly with ginger then finish
it in shoyu and sherry.)
1 c. grated carrots
1 c. cucumber, cleaned and chopped
½ c. cilantro, cleaned and chopped
1 c. Belgian endive, cleaned and chopped
1 c. roasted peanuts
½ head romaine lettuce, cleaned and chopped
½ head Napa cabbage, cleaned and chopped
1 c. red cabbage, cleaned and chopped

Mix all ingredients together and toss with Thai Vinaigrette. Garnish with 1 c. fried wonton strips.
