Southwestern Chopped Salad

Serves 4 – 6

Salad
1 c. pico de gallo salsa, or any fresh chopped salsa
1 c. chicken, cooked and chopped
1 c. grated cheddar cheese
1 c. avocado, chopped ½ c. cilantro, cleaned and chopped
1 c. cooked black beans
1 c. fried tortilla strips or chips
1 head romaine lettuce, cleaned and chopped

Mix all ingredients together and toss with Ranch Dressing

Pico de Gallo
¼ fresh jalapeno chili
3 T. cilantro, cleaned and chopped
¼ red onion, diced
½ lb. tomatoes, chopped
1 t. lime juice
¼ t. salt
¼ t. ground black pepper

Mix all ingredients together and season to taste.

Ranch dressing
1 c. buttermilk
¾ c. mayonnaise
1 t. dried parsley
1 t. dried oregano
1 t. dried thyme
1 t. onion powder
1 t. garlic powder
dash Tabasco

Place all ingredients in a bowl and mix well.
