Nancy’s Completely Delicious (I had 4) Twice-Baked Parmesan Baby Potatoes

small red potatoes (1″ in diameter)
1 container shredded parmesan
mayonaise (enough to bind cheese together)
green onions, chopped, white part only, (I used one bunch)
garlic (5 or 6 cloves) , minced

Wash & clean potatoes. Bake @ 350 degrees on baking pan until easily pierced ,
about 30-45 min.

Mix cheese, chopped garlic & green onion with mayo until combined .

While potatoes are still warm, cut the top off. Use a melon baller and
scoop out enough potato so that it can be stuffed with the cheese mixture
(can be done ahead to this point and refridgerated for a couple hours).

Bake at 375 for 20-25 min or until browned.
