Goat Cheese Fritters

1 egg
6 T. panko
¾ lb. goat cheese
2 c. canola oil

Lightly beat the egg in a small bowl and put the panko in a small bowl and put the panko in a separate bowl. Slice the cheese into small portions (about 1 oz each) and dip into the egg. Dip the cheese in the panko bowl and coat well. Repeat with the other cheese slices.

Heat the oil in a small pan until it reaches 350 degrees. Deep-fry the fritters in about 2″ of oil until they are light brown, 2 to 3 minutes per side. Serve immediately with baguette slices and salad.
